Grind your coffee to suit just before use
Weigh your coffee if brewing: about 60g/100ml
Use water off the boil: about 90-94deg.
Store in an airtight container in a cool, dry & dark place.

Light to Medium roast : Ideal for filter. I wasn’t recommending Yirg on espresso before, but OCR proves different – nice and sweet but still lite.

Jammy juicy & bold mouthfeel.
Flavours of bergamot, black tea & marmalade.
From a few thousand small scale producers. Hand picked, washed & sun dried.
Roasted to a definite brown – this sounds obvious & aloof but it just struck me like it should be defined as THE color brown. Still, before the 2nd crack.
Likewise the crema it produces is very dark.
A deadly espresso but totally killer filter.
One of the best filters I’ve had – full flavours, as above, & lingering

Single Variety: Red Bourbon
Semi Washed. 1410-1600M
Typical Red Bourbon sweetness, gorgeous as espresso with medium acidity. Very forward on the palate revealing caramel & buttery notes. Slightly mellow & fruity along the sides.
Medium roasted. Works great as filter – this enhances many flavours but in particular there is a noticeably lingering aftertaste.

Slow & lush syrup mouthfeel

Generally this coffee is great for giving body to a blend. If you like your sweet red wines then you would love this as an espresso or with milk. Sweet & full bodied in filter – no bitterness but not a refined cup either due to the absence of acidity. Very popular entry level espresso.

Our premium house five-bean blend.
100% Arabica – two varieties contributing towards a deep woody and chocolate body. A further chosen for refined orange acidity and sweet lift. And two semi washed Brazilians and to provide backbone stability to crema.
With the emphasis on body, sweetness and a complex yet sweet & fruity acidity, this blend is tailored for the the modern Irish pallet. As an espresso or short black, aficionados will find these many layers within the shot – this is not an Italian styled espresso : see our Red Rock for that. For the milk based flat’s, latt’s and cap’s the sweet complexities of smooth fruit completely compliment early morning soft warm milk.

A traditional North Italian medium roast, espresso blend – our most popular café blend.
We were very proud to see this blend used by the world-reknown Italian espresso machine manufactuer “GAGGIA” on their stall during the Wolrd Barista Championships held at Caffe Culture in London’s Olympia, June 2010.
A three bean blend, built with two Arabicas and only the very best Robusta there is: from India’s Sethuraman Estate voted 3 years in a row by American Coffee Guru, Kenneth Davids. The Sethuraman Robusta is processed in the pulped natural sytle, leaving it with a brilliant deep red, rich crema. Not to be shunned purely because of the Robusta – this is a traditional Italian blend by design and the Robusta plays a essential part in giving the overall coffee much substance and kick. The other 2 Arabicas are completely different, both high grown, one for a deep, thick & fruity body and the other contributing a refined and bright acidity tending toward oranges and grapefruit.

Lose the caffeine? Sure! ..but you won’t miss out on body, flavour & acidity too! Swiss water decaf’ is the chemical free process for decaffeinating coffee – a very attractive alternative to the dichloromethane and ethyl acetate process of decaffeinating coffee – for obvious reasons :)

As we were saying ... WE ROAST TUESDAY, COURIER WEDNESDAY, YOU HAVE IT THURSDAY
SO ..... all orders received up to midnight Monday are fresh roasted on Tuesday and immediately bagged, labelled and dated. We mail or courier Wednesday - so that you receive it Thursday unless you are in the outter reaches of Ireland (Friday) or outside the island of Ireland.
NOTES ON EFFICIENT BUYING:
- We don't mark up on mailing: we pass the savings on to you, every cent we can ...
- For either 1 or 2 of our 227g bags we use An Post, costing either 2.70 or 3.85;
- For all orders of 3 to 8 x 227g bags, 2 x 1kg, or 1 x 2.5kg we use a courier and this is flat rate fee of 4.50 !!! So for 8 bags, that works out at just 56c freight per bag - The most efficient way to buy coffee!;
- courier charges for over 2.05kg up to 30kg are 8.70;
- yes you can mix bags within the freight set;
- Please note that these mail rates apply ONLY to the island of Ireland.
VOLUME DISCOUNTS:
- if you buy the 1Kg bag we'll charge you just 3.5 times the regular 227g bag price: more than 20% discount !
- if you buy the 2.5Kg bag we'll only charge you 8.5 times the regular 227g bag price: a saving of 23% !

NOTES ON GRINDING:
- We strongly recommend the purchase of whole coffee beans: freshness is preserved much longer in the natural bean form. Furthermore, we recommend grinding only the required amount immediately prior to brewing.
